A super simple recipe that’s great to have around as a quick & healthy snack or breakfast on the go! I love finding simple yet healthy foods to infuse, and this one hit all the marks. These ingredients can easily be swapped out a number of ways according to your preference. You could do almond butter instead of peanut butter, change out the dried fruit + nuts for something different, the world is your oyster!

Dark Chocolate Cherry and Pistachio Granola Bars
Ingredients
- 1 cup oats
- 1/2 cup chopped pistachios
- 1/4 cup flax seed
- dried cherries
- 1/2 cup nut butter of your choice (I used natural peanut butter)
- 1/4 cup honey
- 1 tsp vanilla extract
- 4 ounces dark chocolate
- 1 tbsp canna coconut oil
Instructions
- Mix your oats, pistachios, flax seed, and dried cherries in a large mixing bowl. Set aside.
- In a smaller separate bowl, mix together your peanut butter, honey, and vanilla
- Next, add your nut butter mixture to your oats mixture and combine. This step will take several minutes if you do it by hand, but feel free to use a mixer if you’d like! If your mixture seems too dry add in a little more honey until it reaches a good consistency.
- Pour into a parchment lined pan and use the bowl the firmly press the mixture into the pan. Let chill in the fridge, while you make your dark chocolate mixture.
- Create a double boiler by placing a glass mixing bowl over a sauce pan with boiling water. Add your chocolate + coconut oil to the bowl and melt together until smooth.
- Drizzle over the top of your granola mixture + place back in the fridge to set for 20 minutes. After they’ve set, cut into even bars & place in an airtight container. Enjoy!
